Instructions
1. Dice Hatch Chile and peaches, place them in a sauce pot, and add sugar and lemon juice. 2. Cook on medium heat until the sugar has dissolved. 3. Simmer for an hour, checking periodically, or use a processor to puree the peaches then return mixture to the stove to simmer. 4. If peaches aren't ripe, add liquid pectin to achieve jammy texture. 5. Allow the jam to cool completely. 6. Serve the jam over toasted baguette slices, layered with Brie cheese, and topped with chopped almonds.
